Table of contents
Before Magellan came in the 16th century, Cebu Island was an important point for trade. Many Cebuanos were forming their own small countries with their own languages. Many people were migrating from Mainland China as well. At that time, they were Islamic but currently 80-90% of citizens are Catholic. For a long time, they were under Spanish, American, and Japanese rule, but Metro Cebu, where all types of people come and go, now has a major by-product.
And that is cuisine. Surrounded by the ocean, Cebu has an abundance of marine products. In Cebu, there's not only the representative Filipino grilled-pork dish "lechon", but also standard Chinese dishes, Spanish and American western cuisine, Halohalo which is said to be influenced by Japan. In 21st century Cebu, you can enjoy dining on a variety of Japanese, French, Italian, and Korean dishes in this now international city.
Let us introduce to you some of these delicious, international dishes found in Metro Cebu.

No. 9 Restaurant【Spain】
A good combination of old and new!
It is not only chewy and tasty, but also a refined dish.
The chef-owner grew up with Spanish dishes made by his father and grandmother. He especially loved his father's "Fabada", a dish of beans and chorizo, and enjoyed watching them prepare food, so naturally he also developed a passion for cooking. Now, he travels for inspiration for more unique dishes to introduce to his customers. One of these ideas is his "Fideo Negro", pasta cooked in a squid ink sauce topped with fresh squid and chorizo. New foods are added every month!
Olive oil and spices - key ingredients for Spanish dishes - are imported from Spain.
Dulce and Picante Pimiento – sweet red pepper used to garnish and add flavor to dishes such as their Callos and Garbanzos.
The restaurant used to be a family home. This restaurant is actively trying new techniques, like the rarely-seen-in-Japan "Sous Vide", where meat is sealed in a vacuum pack for 18 hours and cooked over low temperatures.
Owner's Profile
Studied for 2 years at International Culinary Arts Academy, Cebu (ICAAC).
After graduating, he worked as a resort chef for 6 months.
Has experience as a private event/party chef.
Opened "No.9" in 2014.

SOBA KAMAKURA【Japan】
All in all, a thorough Japanese restaurant
The eels are a standard item from Japanese eel farms in Butuan, Mindanao Island, aimed at exports to Japan. Self-prepared and grilled just before eating, they're especially exquisite.
For healthy, classic Japanese soba. After returning to Japan, he began his training and studying with strong resolution. From the buckwheat flour and dashi to kaeshi sauce and water, he is obsessed with being thorough. This hideaway's number of customers increases via only word of mouth. The flavor and management is of Japan itself - here you can enjoy the real thing.
The organic, unpolished buckwheat, produced in Hokkaido, is pulverized by a low-speed millstone, finished as high-quality buckwheat flour, and then transported via cold storage to keep the scent. The soba is made on-order.
